Tart and Sweet Coleslaw
3 T. expeller-expressed, extra-virgin olive oil
2 T. organic apricot or peach fruit-only type spread
2 T. organic unpasteurized cider vinegar (with "mother" type such as Bragg's)
1 T. organic ketchup
1 t. dry mustard
1/2 t. real sea salt or Redmond Real salt
3 c. shredded cabbage
1 c. shredded carrots
2 green onions, thinly sliced
1. In a large bowl combine dressing ingredients: oil, fruit spread, vinegar, ketchup, mustard, salt and pepper.
2. Add cabbage, carrots and green onion and toss to coat.
Makes 4 servings.
