Kalamata Olive, Tomato and Cucumber Salad with Feta Cheese
1 large green bell pepper, cut into thin strips
3 medium tomatoes, cut into wedges, or the equivalent of grape tomatoes cut in half
1 large English hothouse cucumber, peeled, halved lengthwise, seeded, cut into 1/4 -inch slices
3/4 kalamata olives, pitted and halved
2/3 cup chopped red onion
1/3 cup chopped fresh Italian parsley
5 tablespoons olive oil
3 tablespoons fresh lemon juice
1. Place bell peppers tomatoes, cucumber, olives, onion, and parsley to a salad bowl.
2. Whisk oil and lemon juice in a small bowl to blend.
3. Season with salt and pepper, then mix into vegetables.
4. Let vegetables marinate at least 15 minutes before serving.
Makes 6-8 servings.
Note: Can be made 3 hours ahead. Cover and chill until served.
