Mango and Cilantro Salad
3 yellow-green mangoes, peeled and chopped
1 bunch chopped cilantro
1 medium red onion
1 red bell pepper, coarsely chopped
juice from 1 freshly squeezed lime
1/2 t. crushed red pepper flakes (optional)
Real salt and pepper to taste
2 avocados, peeled and sliced
1. Place mangoes, cilantro, red onions and red bell pepper in a bowl.
2. Pour lime juice over.
3. Season with salt, black pepper and red pepper.
3. Fold in the avocados last.
4. Combine all ingredients.
5. Add more seasoning to taste.
