Sesame Chopped Salad
Salad Ingredients:
1 small head of red or green cabbage (or both combined), shredded
1/4 head iceberg lettuce, shredded
1/2 lb. fresh bean sprouts
1 c. jicama or cucumber, cut julienne style for jicama or sliced for cucumber
1 c. toasted slivered almonds
1 T. toasted sesame seeds
1 recipe Asian Salad Dressing (see recipe below)
Salad Directions:
1 recipe Asian Salad Dressing (see recipe below)
Salad Directions:
1. In a large bowl, combine cabbage, lettuce, bean sprouts, jicama or cucumber and almonds.
2. Drizzle dressing (see recipe below) over salad and toss to combine.
3. Sprinkle with sesame seeds.
Sesame and Ginger Dressing Ingredients:
1/4 c. soy sauce
1/4 c. white wine vinegar
3 T. pure organic maple syrup
1 T. organic peanut butter (peanuts-and-salt-only kind)
1 T. grated fresh ginger
1/2 t. dried coriander, crushed
1/4 c. avocado oil
1/4 c. toasted sesame oil (expeller-expressed)

Dressing Directions:
1. In a bowl combine all ingredients except avocado oil.
2. Whisk to combine.
3. Slowly drizzle in oils, whisking until thickened.
Makes 6 servings.
