Menu Plan Monday for April 19th, 2008



Look for a new feature on Mondays on this blog. As often as I can (probably will not be every week), I will post my menu plans for the week in a post called Menu Plan Monday. These will be for evening meals only (at least for now), though I will continue to post recipes for breakfast and lunch foods also.


The really great thing about Menu Plan Monday is that there are hundreds of blogs and websites that host this feature. The participants post their menus on one blog (click on this link to go there). You can visit the website and find literally hundreds of menu plans. There are menus that feature traditional whole foods.

Hopefully, this will be a good resource for you. Meantime, here is my menu plan for the week along with recipes (click on the recipes that are highlighted):
Monday: Herb Roast Chicken, baked sweet potatoes, mixed green salad, Steamed Greens (Swiss chard or mustard greens, etc.)


Tuesday: Pulled Pork Sandwiches, Raw Sauerkraut (make your own or buy Bubbies and never heat raw sauerkraut), Cucumber and Feta Salad fresh fruit

Wednesday: Red Pepper Quiche, mixed green salad, Buttered Beets, fresh fruit


Thursday: Spicy Chicken Tortilla Soup (from chicken on Monday) with or without tortilla chips, Sweet Broccoli Salad
Friday: Scrumptous Macaroni and Cheese, California Spinach Salad, sliced tomatoes or grape tomatoes


Saturday: Leftovers

Sunday: Hamburgers on Alvarado St. sprouted whole wheat hamburger buns, Oven French Fries, lettuce, tomato, pickles, onion (for burger), Carrot Ginger Slaw (make on Saturday)

Jesus Christ has been my Savior for 47 years. Robert, the wonderful man that God provided to love me has been my husband for 45 of those years. We have five grown children, with children of their own. Of course, that means that we have grandchildren - 10 to be exact, and five great-granddaughters with another great-grandbaby on the way. I have been a stay-at-home mom, sometimes helping to supplement the income from within the home. Now I am a stay-at-home grandmother. Jesus Christ has been my guide and keeper and I have found, in all the trials, heartbreaks and good times that He just keeps getting sweeter and sweeter as the years roll by. My future is secure and I look forward to eternity in the presence of my Creator, Redeemer and King.
